Ingredients
- 1/4 cup Foothill Farms® French Dressing & Seasoning Mix
- 1/4 cup Pineapple Juice
- 3 Tbsp. Soy Sauce (low sodium)
- 6 Tbsp. Brown Sugar
- Sesame Oil
- 1 lb. Boneless Skinless Chicken Thighs (cut into 1" chunks)
- Corn Starch
- Salt
- Pepper
- Neutral Oil
- 1/2 Medium Onion (finely diced)
- 1 Red Bell Pepper (diced)
- 1-2 cloves Garlic (minced)
- 1 cup Pineapple Chunks
Instructions
- Combine pineapple juice, Foothill Farms® French Dressing, soy sauce, brown sugar, & sesame oil in a small bowl. Set sauce aside.
- Salt & pepper chicken pieces generously. Coat pieces in corn starch thoroughly until pieces are no longer wet.
- Fill the bottom of a high-walled pan or wok with a thin layer of neutral oil. Heat on high until shimmering.
- Turn burner to medium-high. Carefully drop chicken into oil ensuring no excess starch goes into oil. Cook until a thin crust has formed, then stir continuously until chicken is fully cooked and internal temperature has reached 165°F.
- Add in the onion and red bell pepper and stir continuously until they have softened but still crispy, approximately 2 minutes.
- Add in garlic and stir continuously for 1 minute. Scrape any excess corn starch and drain excess oil if desired.
- Set heat to medium-low and add in sauce. Thoroughly coat mixture with the sauce, and heat sauce until lightly bubbling.
- Remove from heat and stir in pineapple chunks. Serve immediately.
