Mexican Street Corn Queso Cheese

Ingredients
- 2 cups Superior Melt™ White Queso Cheese Sauce Mix
- 64 oz Hot Water
- 2 Cups Fire Roasted Corn Kernels
- 6 oz Chopped Green Chiles
- 2 Tbsp Ground Cayenne Pepper
- 4 Tbsp Granulated Garlic Powder
- 4 Tbsp Tajin Seasoning
- 2 Jalapenos (sliced and chopped)
- 1/2 Cup Chopped Cilantro
- 1/2 Cup Cojita Cheese
Instructions
- Add corn to a skillet with ½ teaspoon of oil. Cook on medium-high until the corn char, about 5-7 minutes. Remove from heat and set aside, about 5-7 minutes. Remove from heat and set aside.
- Prepare Foothill Farm® Superior Melt™ White Queso Cheese Sauce Mix according to bag instructions.
- Add diced chiles, roasted corn kernels, and spices. Stir until blended. Simmer for 15 minutes.
- Remove from heat and add the following while stirring cheese sauce: Chopped jalapenos, chopped fresh cilantro and grated cojita cheese.
- Keep warm before serving.
