Mexican Street Corn Queso Cheese

Ingredients
  • 2 cups Superior Melt™ White Queso Cheese Sauce Mix
  • 64 oz Hot Water
  • 2 Cups Fire Roasted Corn Kernels
  • 6 oz Chopped Green Chiles
  • 2 Tbsp Ground Cayenne Pepper
  • 4 Tbsp Granulated Garlic Powder
  • 4 Tbsp Tajin Seasoning
  • 2 Jalapenos (sliced and chopped)
  • 1/2 Cup Chopped Cilantro
  • 1/2 Cup Cojita Cheese
Instructions
  1. Add corn to a skillet with ½ teaspoon of oil. Cook on medium-high until the corn char, about 5-7 minutes. Remove from heat and set aside, about 5-7 minutes. Remove from heat and set aside.
  2. Prepare Foothill Farm® Superior Melt™ White Queso Cheese Sauce Mix according to bag instructions.
  3. Add diced chiles, roasted corn kernels, and spices. Stir until blended. Simmer for 15 minutes.
  4. Remove from heat and add the following while stirring cheese sauce: Chopped jalapenos, chopped fresh cilantro and grated cojita cheese.
  5. Keep warm before serving.
