Ingredients
- 12 oz. Superior Melt™ Yellow Queso Cheese Sauce Mix
- 6 fl. oz. Amber or Brown Ale, room temperature
- 8 oz. Mild Cheddar, freshly grated
- 8 oz. Sharp Cheddar, freshly grated
- 2 cloves Minced Garlic
- 1 Tbsp. Worcestershire Sauce
- 1 tsp. Ground Mustard
- 1 tsp. Hot Sauce
- 2 tsp. Chives, freshly snipped
- Salt
- Pepper
Instructions
- Pour ½ gallon of hot water (180°-190°F) into mixing bowl or container.
- Slowly pour Foothill Farms® Superior Melt™ Yellow Queso Cheese Sauce Mix (2 lbs.) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and cheese is smooth.
- Refrigerate overnight until firm and set.
- Remove 12 oz. of cold prepared cheese sauce for the recipe.
- Flatten the beer! Remove as much of the carbonation as possible.
- Add the beer to a bowl and whisk it well – off and on for 5 to 10 minutes. Set it aside.
- Place the cheeses and garlic in a food processor and pulse until well blended.
- Add the Worcestershire, mustard, hot sauce, and salt and blend until combined.
- With the food processor on, slowly pour in in the beer until the mixture is smooth, about 8 full minutes.
- Scoop it into a bowl, top it with the chives and serve or refrigerate until ready to use.
