Coconut Raspberry Pancakes

Ingredients
- 2 Cups Whole Milk
- 1 Bag Foothill Farms® Coconut Flavored Cream Dessert Filling Mix – Artificially Flavored
- 1/2 Cup Water
- 1 Cup Pancake Mix
- 1 Bottle Smucker’s Raspberry PlateScapers® Dessert Topping
- 3/4 Cup Raspberries (fresh)
- Vegetable Oil
- Powdered Sugar
Instructions
- Pour milk into the bowl of an electric mixer; add Foothill Farms® Coconut Flavored Cream Dessert Filling Mix – Artificially Flavored. Using the whisk attachment, mix on low speed for 1 minute. Turn off and scrape sides.
- Continue mixing on high speed for 3 to 4 minutes or until firm.
- Whisk 1½ cups Foothill Farms® Coconut Flavored Cream Dessert Filling Mix – Artificially Flavored, water and pancake mix until combined (batter will be lumpy).
- On a preheated griddle coated with some vegetable oil, portion out a scant ½ cup batter for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.
- To serve: Place 3 pancakes on a platter. Place a large dollop (about ½ cup) Foothill Farms® Coconut Flavored Cream Dessert Filling Mix – Artificially Flavored on top and drizzle with Smucker’s® Raspberry PlateScapers® dessert topping.
- Cover with ¼ cup raspberries and a dusting of powdered sugar.
