Spinach Salad Cup with Italian Dressing

Ingredients
- 1 bag Foothill Farms® Italian, Caesar & Vinaigrette Dressing & Seasoning Mix
- 3 cups Vinegar
- 1/2 gal Water
- 5 cups Vegetable Oil
- 2 tbsp Green Pepper, Chopped
- 1/4 cup Whole Grain Rotini Pasta, Cooked
- 2 tbsp Diced Tomatoes, Canned, Low Sodium
- 2 oz Chicken, Fully-Cooked, Diced
- 1 oz Mozzarella Cheese, Shredded, Low Fat
- 1 1/2 cups Baby Spinach
Instructions
- In a large mixing bowl, whisk together Foothill Farms® Italian, Caesar & Vinaigrette Dressing & Seasoning Mix, vinegar and water.
- While whisking, slowly add the vegetable oil to the mixture and continue whisking until emulsified.
- In a transparent 20 oz cup with lid, layer the following items in order: 2 tbsp Italian Dressing, 1/8 cup chopped peppers, 1/4 cup pasta, 1/8 cup tomatoes, 2 oz chicken and 1 oz cheese. Spinach goes on top so dressing will not wilt it. Cover with lid.
- When ready to eat, open lid and turn over onto a plate. Salad is completely prepared with lettuce on bottom and dressing on top.
