Ingredients
  • 12 oz. Superior Melt™ Yellow Queso Cheese Sauce Mix
  • 6 fl. oz. Amber or Brown Ale, room temperature
  • 8 oz. Mild Cheddar, freshly grated
  • 8 oz. Sharp Cheddar, freshly grated
  • 2 cloves Minced Garlic
  • 1 Tbsp. Worcestershire Sauce
  • 1 tsp. Ground Mustard
  • 1 tsp. Hot Sauce
  • 2 tsp. Chives, freshly snipped
  • Salt
  • Pepper
Instructions
  1. Pour ½ gallon of hot water (180°-190°F) into mixing bowl or container.
  2. Slowly pour Foothill Farms® Superior Melt™ Yellow Queso Cheese Sauce Mix (2 lbs.) into water while vigorously stirring with a wire whisk. Continue stirring until mix is completely dissolved and cheese is smooth.
  3. Refrigerate overnight until firm and set.
  4. Remove 12 oz. of cold prepared cheese sauce for the recipe.
  5. Flatten the beer! Remove as much of the carbonation as possible.
  6. Add the beer to a bowl and whisk it well – off and on for 5 to 10 minutes. Set it aside.
  7. Place the cheeses and garlic in a food processor and pulse until well blended.
  8. Add the Worcestershire, mustard, hot sauce, and salt and blend until combined.
  9. With the food processor on, slowly pour in in the beer until the mixture is smooth, about 8 full minutes.
  10. Scoop it into a bowl, top it with the chives and serve or refrigerate until ready to use.
